Actually the meat is not that crushed. I boiled the meat to acquire the broth and take it out of the hot water. I pounded the meat with pestle until it is flat.Then the meat is soaked with the broth and added certain ingredients. It is boiled again until tender.
These are the ingredients that I sometimes forget and when I do, I immediately call my mom to ask.
A big slice of galanga (lengkuas) grated
A slice of ginger
A pinch of corriander seed powder
Two spoons of soybean sauce
A glass of coconut milk (if you like)
After it is tender, put three spoons of olive oil and cook it until greased. It’s nice when you eat it with hot rice 🙂
